Artisanal Maturity Process
Traditional and Natural aging procedure. From 12 months to +24 months, according to each piece morphology and salt amount. Very important here to have the expertise needed to visually check each piece and know where the maturity process is. LegioBeef is characterized by an intense cherry color and a high meat marbling.
